Restaurant/Bar Les Terrasses - Gilles, the Pizza Artist



At the inauguration of the Restaurnt/Bar Les Terrasses it was great to walk through from the terrace, past the bar, into the refurbished restaurant and explore the kitchen. Best for me though was watching Chef Gilles makes pizzas. What an artist! Start with a perfect sphere of dough, press it out, throw it about, roll it, fill it and put it into the pizza oven. Lors de l'inauguration du Bar/Restaurant  Les Terrasses c'était formidable de traverser la terrasse devant le bar, d'entrer dans le restaurant rénové et d'explorer la cuisine. Le meilleur pour moi a été de regarder le chef Gilles faire les pizzas. Quel artiste! Il commence par une parfaite boule de la pâte, il l'aplatit, la soulève, l'arrondit, la garnit et la rentre dans le four à pizza. Demain, la suite...

  8. The Chieftess, I've never seen this done in the south of France - and certainly not in an old village. Perhaps it's a more 'showy off' thing done to sell pizza - in other countries like America and maybe the UK! It's not part of the culture here certainly at least I've never seen in the south here or across the border in Italy.

That's quite "the thing" in a lot of pizza places that make their own dough here in the states...well...in LA and NY...although you don't see it much anymore...it used to be much more popular years back...interesting...tv, of course, always makes it look like it's the Italian thing to do!
