Gérald Canet's 'Pièce montées' - Building up the Layers

The first layer is complete and now Gérald is building a decorative second layer to which he is adding sugared almonds. These are traditional in France but they also add strength to the pièce montée.

In the third photo, Papa Canet is keeping a close eye to make sure everything is horizontal.  Gérald learned his profession from his father, and his father learned it from his father. Three generations - the original patisserie was in Monaco.

Le premier étage est terminé et maintenant Gérald en construit un deuxième niveau,  auquel il ajoute des dragées. C'est traditionnel en France mais cela renforce également la pièce montée.  

Dans la troisième photo, Papa Canet garde un œil attentif pour s'assurer que tout est horizontal.  Gérald a appris son métier de son père  et son père l'a appris du sien. Trois générations - la pâtisserie d'origine était à Monaco.
